Gin Eva producers, Eva & Stefan will be attending Junipalooza 2018 and in anticipation for their arrival, we wanted to share with you a little glimpse of what’s to come…
Founded by husband and wife team in 2011 following from Stefan’s interest in wine and spirits and his family’s heritage as winemakers, Gin Eva’s main botanicals are prepared by hand using fresh ingredients. The seasonal variance (for the citrus in particular) is not intentionally countered by adapting the recipe dosages and thus, left to impact the overall outcome. Because of this, each batch will be slightly different to the next, adding to the gin’s artisanal charm (only 70 bottles are made at time). Theirs is a relentless pursuit to hone their craft and to chase the perfect botanicals that will work in harmony.
To make their flagship Gin, rather unconventionally the botanicals are macerated in the pure grain spirit for entire weeks before being placed in their 150-litre copper still. Following distillation, the spirit is then left to rest for several weeks to harmonize the aroma and flavour before bing bottled and ready to taste. It’s a long process from start to finish! Expect strong citrus and juniper at the fore of your glass from their use of local botanicals, and a lovely duo behind the Junipalooza stand!
